Mango & Lentil Salad
Mango & Lentil Salad

If there's one thing I love about Caribbean cuisine, it’s the way we embrace bold flavors, fresh ingredients, and vibrant colors in every dish. Growing up in the Caribbean, mango season was always a time of pure joy. We’d pluck ripe mangoes straight from the tree, their sweet juices dripping down our hands as we devoured them under the sun. That love for tropical fruits, combined with my appreciation for hearty, nourishing meals, inspired this Mango & Lentil Salad, a dish that brings together the best of my Caribbean roots with a modern, health-conscious twist.

This salad isn’t just about taste ... it’s a celebration of everything that makes Caribbean food special: sweet, tangy, spicy, and fresh. The combination of juicy mangoes, hearty lentils, and aromatic herbs creates a dish that’s as satisfying as it is beautiful. And let’s not forget the citrus-kissed dressing that ties it all together!

How to Enjoy This Salad – Caribbean Style!

This salad can be eaten on its own, but in true Caribbean fashion, I love pairing it with:

  • Grilled Shrimp or Chicken – The smoky, spicy heat complements the sweetness of the mango.

  • Fried Plantains – A little extra sweetness never hurt anyone!

  • Coconut Rice – Because everything tastes better with a little coconut.

Final Thoughts
