I love a good side! For me, a great side dish is one that I can have with nothing else and be perfectly satisfied. There are a few rice dishes I feel that way about, and this is one of them. Ingredients
2 cups basmati rice
2 cups coconut milk
1 cup water
1/2 tsp salt
2 tsp Jamaican curry powder
Preparation
Pour coconut milk in a sauce pan and add salt and curry
Whisk well to dissolve and ensure no clumping of the curry.
Add the rice, stir and cover pan with lid.
Cook on medium heat for approximately 10 to 12 minutes.
